Bombay Chickpea
Rice Salad
Perfect For: A refreshing and nutritious lunch or side dish
Ideal Rice: Patran 1401 Steam Basmati
Ingredients:
1 cup Patran 1401 Steam Basmati Rice
1 can (400g) chickpeas, drained and rinsed
1/2 red onion, finely chopped
1/2 cucumber, diced
1/2 cup cherry tomatoes, halved
1/4 cup fresh coriander, chopped
Juice of 1 lemon
2 tablespoons mango chutney
1 teaspoon curry powder
Salt and pepper to taste
Instructions:
Cook the basmati rice according to package instructions. Let it cool.
In a large bowl, combine chickpeas, red onion, cucumber, cherry tomatoes, and coriander.
In a small bowl, whisk together lemon juice, mango chutney, curry powder, salt, and pepper.
Add the cooled rice to the vegetables, pour the dressing over, and toss gently to combine.
Serve chilled or at room temperature.
