Vegetable Pulao

Ideal Rice: Patran 1121 Sella Basmati
Ingredients:
1 cup Patran 1121 Sella Basmati Rice (soaked for 30 mins)
2 tablespoons ghee or oil
1 bay leaf, 2 cloves, 1 small cinnamon stick, 2 cardamoms
1 chopped onion
1 chopped tomato
1 cup mixed vegetables (carrot, beans, peas)
1/2 teaspoon cumin seeds
Salt to taste
2 cups water
Fresh coriander for garnish
Instructions:
Heat ghee in a pan, add cumin seeds and whole spices. Let them splutter.
Sauté onions until golden, then add tomatoes and cook until soft.
Add vegetables and cook for 3–4 minutes.
Add soaked rice, salt, and water. Stir gently.
Cover and cook on low flame until rice is fluffy and water is absorbed.
Garnish with coriander and serve hot with raita.
