Italian Tuna

and Rice Salad

Perfect For: A light and flavorful lunch
Ideal Rice: Patran 1121 Sella Basmati

Ingredients:

  • 1 cup Patran 1121 Sella Basmati Rice

  • 1 can (185g) tuna in olive oil, drained

  • 1/4 cup chopped sun-dried tomatoes

  • 1/4 cup sliced black olives

  • 1/4 cup diced red bell pepper

  • 2 tablespoons chopped fresh basil

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste

Instructions:

  1. Cook the basmati rice according to package instructions. Let it cool.

  2. In a large bowl, combine tuna, sun-dried tomatoes, olives, red bell pepper, and basil.

  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

  4. Add the cooled rice to the tuna mixture, pour the dressing over, and toss gently to combine.

  5. Serve chilled or at room temperature.
