Vegetable Rice Bowl
Perfect For: A light and healthy lunch or dinner
Ideal Rice: Patran 1401 Steam Basmati
Ingredients:
1 cup Patran 1401 Steam Basmati Rice
1 zucchini, sliced
1 bell pepper, sliced
1 red onion, sliced
1/2 cup cherry tomatoes
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Cook the basmati rice according to package instructions.
In a bowl, toss zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, oregano, salt, and pepper.
Grill the vegetables until tender and slightly charred.
Serve the grilled vegetables over a bed of basmati rice.
Garnish with fresh parsley and a drizzle of olive oil.
