Vegetable Rice Bowl

Perfect For: A light and healthy lunch or dinner
Ideal Rice: Patran 1401 Steam Basmati

Ingredients:

  • 1 cup Patran 1401 Steam Basmati Rice

  • 1 zucchini, sliced

  • 1 bell pepper, sliced

  • 1 red onion, sliced

  • 1/2 cup cherry tomatoes

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

  1. Cook the basmati rice according to package instructions.

  2. In a bowl, toss zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, oregano, salt, and pepper.

  3. Grill the vegetables until tender and slightly charred.

  4. Serve the grilled vegetables over a bed of basmati rice.

  5. Garnish with fresh parsley and a drizzle of olive oil.
